Ham & Egg Breakfast Casserole {#TXBacon Recipes}

I love a good, hearty tasty breakfast. Especially on a Sunday morning. Problem is that in Beeville, there’s only your run of the mill fast food joints, and that means if I want a tasty breakfast…

I need to make it myself.

My task was to make a Texas Sized Breakfast. And technically I did, but I am also very calorie conscious, so I made this is both indulgent and moderate in calories. You can have the best of both worlds my dear friends.

As usual, I head to Walmart to pick up the items I need. The main ingredient is the uber tasty Petit Jean Meats ham. It’s already sliced, so it makes it easy for sandwiches or to chop up for a casserole. You can find Petit Jean ham at your local Walmart in the pork section.


It’s easy to spot because of the rather large Dallas Cowboys logo on it.


Once I have all my ingredients, I can get started.



-1 pack of country gravy

-1.5 cups of milk (1/2 cup for casserole, 1 cup for gravy)

-4 slices of Petit Jean Ham

-6 large eggs

-1 cup shredded cheese (2/3 for casserole, 1/3 for gravy)

-Salt, Pepper, Water

Step 1: Preheat oven to 425 degrees. Dice up your 4 slices of ham into small pieces and heat them up on the stove. I just used a small pan and heated them up. Only took about 3-4 minutes. Once they’re all warm, just turn off the stove and let them sit until we’re ready to toss the ham into the casserole.


Step 2: Take a 9×13 pan, spray cooking spray on it, and arrange your 10 biscuits. As you can see, they don’t cover the entire bottom, so just use your clean hands and form a crust. It doesn’t have to be perfect.



Step 3: Grab a large bowl and whisk. Crack your 6 eggs and add in 1/2 cup of milk + salt & pepper. Don’t go too nuts with the salt because the gravy, ham and cheese all have salt, too.


Step 4: Whisk until your eggs are well blended/beaten with the milk. You should have a frothy/bubbly consistency.


Step 5: Scatter the Petit Jean ham pieces all over the biscuit crust.


Step 6: Sprinkle 2/3 cups or 56 grams of cheese over the ham…yes, I measure everything precisely 😉



And while all this is going on, make sure your silly doggy doesn’t try to get into the casserole. I tossed him a few pieces of ham, but he never left my side while I was prepping this meal. He loves ham. And bacon. And anything that isn’t dog food.


Step 7: Pour the egg mixture over the ham/cheese/biscuits. Pop into the oven for 17-20 minutes at 425.


While the casserole is cooking, you can quickly whip up a cheesy gravy to top it with. I used a store bought gravy packet which calls for 2 cups of water. Instead, I used 1 cup water + 1 cup milk for a creamier texture. I also added in 1/3 cup of cheese to make it a smidge more decadent. Cook on medium, and once the gravy thickens turn it down to low.


About 17 minutes later, I have a gorgeous, tasty, protein packed casserole. Let it sit for about 3 minutes before slicing into 8 servings. I used a pizza cutter.


Serve up a slice on a plate and top it with a heaping spoonful of cheesy gravy. Divine. It is so tasty and the gravy just sends it over the top. The cheese is gooey yet not overbearing. And the ham is salty and warm. Oh it is heaven.


Look at the beautiful biscuit crust as the steam rises up from the casserole/gravy.




Now, if you aren’t calorie conscious, you can go back for seconds. And thirds. I, however, am always struggling with my weight, so one serving for me. Hubby enjoyed 2.

Here’s the calorie breakdown for those of you who are curious. (Add in another 55 calories for 1 spoonful of gravy).


Not too bad, right? For about 260 calories you can enjoy a Petit Jean ham filled casserole with all the works and not feel too bad about your Texas Sized breakfast.

Personally, I am looking forward to the leftovers. About 45 seconds in the microwave, and you’re good to go.

    I'm going to make this for dinner tonight, I think. I will probably make gravy from scratch, because I don't think I have a gravy packet. I don't have access to Petit Jean's, but we'll suffer through. Is there a particular reason for warming the ham first? Your dog is adorable. We have a half-Chihuahua who has the same sweet face, though she's older and quite portly from begging scraps. (She's also part blue-merle fox terrier, so we call her a fox-huahua.)     Okay, this got 5 stars at the table tonight. Everyone liked it very much, and everyone said it should be made again. Turns out I did have a packet of gravy mix, and I'll have to get some more, if I'm going to be making this regularly! Thanks again!

    I just made this for dinner and it was a big hit! Even my picky one loved it. 🙂 I used whole wheat biscuits and didn't add cheese to the gravy (my 5 year old would have freaked out). My biscuits did stick, but that's okay. I like crunchy bottom stuff. 🙂
