Re-joining Weight Watchers has been one of the best decisions I've made in 2016. Their SmartPoints system really works well for me, and the program naturally helps me make better food choices.
In 10 weeks, I've lost 20.8 pounds using the SmartPoints system! I'm stoked. I'm eating a lot of fruits and veggies, lean protein, plus drinking way more water, but a habit that has proven hard to kick is my love of sweets. I love pastries, candy, and ice cream. There's nothing better than a yummy treat at the end of a long work day, right? I love sweet treats.
My local H-E-B has a variety of Weight Watchers branded and endorsed products, but my faves are the Weight Watchers Endorsed Jolly Time Pop Corn (perfect for those afternoon snack pangs at the office) and the Weight Watchers frozen novelties. They're pre-portioned, ready to go, and at only about 3-5 SmartPoints per serving, they easily fit into my daily points goal. They make my snacking easy and stress free. While these products are fabulous as is, being on a long-term lifestyle change requires you to get creative in the kitchen. I thought about what treats I love the most and it was a tie between chocolate peanut butter cups and creamy soft serve. Using some ingenuity and Weight Watchers products, I created my own giant, velvety smooth peanut butter fudge soft serve cups. At only 3 SmartPoints each, you can have two during your next TV/movie marathon.
Peanut Butter Fudge Soft Serve Cups
Prep Time: 10 minutes
- 2 Weight Watchers Giant Chocolate Fudge Ice Cream Bars
- 1 tub of light whipped topping
- 2 tbsp of powdered peanut butter
Step 1: Thaw the whipped topping and fudge bars for about 5-7 minutes until soft. You can speed along the process using a microwave in 10-second increments.
Step 2: In a bowl, combine the whipped topping, fudge bars and peanut butter powder. Use the spatula to slide the fudge bar off the stick. Lightly fold all the ingredients together until well combined.
Step 3: Grab a six-count cupcake/muffin tin and line with six cupcake liners. Fill each cupcake liner to the top with the mixture. Freeze for at least 4 hours.
Step 4: When you're ready to enjoy, take out a single serving and serve with strawberries, bananas or any other zero-point fruit to make it a bit more filling and decadent. I like to eat my treats while reading magazines, watching TV or playing on my phone.
