Summer in South Texas can be muy caliente, but that doesn’t stop me from party planning! Long summer days mean fiesta time to me. I’ve always loved party planning and being crafty, so I absolutely love having get togethers with family and friends for no reason at all. It gives me opportunities to try out new recipes and create some fun décor.
At my parties, we always serve Mexican food because it is tasty! I love tacos, enchiladas, chalupas…ya know, anything on a tortilla, hee hee. Mexican dishes are universally liked over in these parts, plus the recipes are easy to make and affordable. Ole!
I’m usually so focused on the food that I rarely make desserts, but today I am sharing with you the ultimate Hispanic/Latino dessert: Tres Leches! I’m taking it up a notch by adding in strawberry rhubarb syrup, plus I also have another secret ingredient up my sleeve. Let’s dig in, shall we?
This recipe comes together in no time at all, and it’s fluffy, sweet, and delicious.
Tres Leches Cupcake Recipe:
-18-24 (I made 18 hefty cupcakes, but probably could have made 24) cupcakes made with vanilla cake mix
- 1 tbsp of cinnamon
-1/2 cup of 2% milk
-1/2 cup of Nestle La Lechera Sweetened Condensed Milk
-1/2 cup of Nestle Coffee-Mate Dulce De Leche Creamer
- 4 Nestle Outshine Fruit & Veggie Bars (Strawberry Rhubarb flavor)
- Foil cupcake tins
Whipped Topping/Icing Recipe:
-1 pint of heavy whipping cream
-1 tbsp of powdered sugar
-1 tbsp of Nestle La Lechera Sweetened Condensed Milk
Step 1: Make 18-24 cupcakes as directed on the vanilla cake mix box of your choice. Once your batter is mixed, add in 1 tbsp of cinnamon, mix again. Bake as directed; let cupcakes cool.
Step 2: Mix your 2% milk, sweetened condensed milk, and creamer in a bowl until well mixed. Set aside.
Step 3: In a microwave safe bowl, place unwrapped Outshine Strawberry Rhubarb flavored popsicles and microwave until melted. Place in fridge or freezer to cool down.
Step 4: After your cupcakes have cooled, use a fork or toothpick to create holes in the cupcake tops (try to keep holes away from edge). I made about 16-20 small holes in each cupcake.
Step 5: Spoon milk mixture over each cupcake until all the mixture is used. Then repeat the process with melted strawberry rhubarb mixture.
Step 6: Top with icing (to make whipped topping, simply beat all the ingredients together until stiff peaks form) and extra strawberry rhubarb syrup, if desired.
I really do think that using the combo of sweetened condensed milk + coffee creamer made for an extra creamy, delicious tres leches cupcake, but the real star of the show were these bars:
I found them at my local HEB, and they’re delicious! They’re a great source of vitamin C, there are tons of flavor options such as lime, and coconut with pineapple, and they’re affordable! Some of the flavors also incorporate veggies which is a HUGE plus for me. I have a hard time with veggies, so this is really cool. My husband thinks it’s cool, too, as you can see below. And some of them are as little as 35 calories? I can have a few and not feel guilty.

The people of HEB may have given us the side eye…we don’t care, we love to have fun while shopping! :) These are great for the kids and overall just a super refreshing summer snack. However, I love strawberry rhubarb and always want to use that combo in a recipe, but never can find rhubarb.
Problem solved! A couple of seconds in the microwave and I had the tastiest strawberry rhubarb syrup ever. You can do this with any of the Outshine flavors—tangerine carrot glaze over a pound cake? Um, yes please! Or submerge a few of the Outshine bars into a pitcher of tea or lemonade for instant gourmet flavor. Aguas frescas, anyone?
The Outshine bars took my tres leches to a new level of yumminess. I took a traditional Latino dessert, and put a Monica twist on it. I think the familia approved given how many of these were consumed over the weekend.
Any good fiesta needs decorations. Now, I know not everyone is crafty, so today I have 2 freebies for you + a SUPER easy/stunning centerpiece idea. You can make these crafty items in minutes for very little time/money.
Any fiesta needs a proper pennant banner. I love walking around El Mercado/Market Square in San Antonio (my hometown) and seeing those tissue paper garlands all over the place. They’re colorful, vibrant, and make my heart happy. Well, now you can make one at home with some cardstock, curling ribbon, and this free PDF.
Simply cut out the pennants, punch holes, and string some ribbon through. This would be perfect for the back of chairs, over the food table, or hanging from trees. Print as many as you need and off you go. You can also have los ninos do this project; it’s fail proof.

And finally, I have the world’s easiest glitter centerpiece idea. I LOVE floating candles, but sometimes I get bored of the usual submerged flower or rocks or marbles—I want some glitter! Well, if you use a few dashes of the bigger glitter flakes in some water with a floating tealight, you have an instant stunner. Mix and match colors to create a unique glittery effect. Eventually a few glitter flakes will fall to the bottom and then even more light sparkles. In the photo below, I combined lime green with teal.

You could do this in any glass candle holders/vases you have to create an array of them, or just make a few to accent certain areas.
